Cucumbers and Onions – quick, sweet and addictive.

Growing up, my Grannie and/or aunt’s would make cucumbers and onions when we would go camping or having an outside grill night.

Now, trying to manage my weight (like most women these days) cucumbers and onions is my go to sweet snack during the day. Not to mention it is fairly inexpensive.

Cucumbers & Onions 🥒🧅

Ingredients:

  • 1 cup sugar
  • 1/2 cup apple cider vinegar
  • 2 cups warm water (tap water level)
  • 2 cucumber med to large
  • 1 medium onion slice thin ( I prefer purple onions personally but use your fav)

Steps:

  1. Whisk to combine the first 3 ingredients in a Pyrex or Tupperware container, with a lid, that you will store the cucumbers and onions in. Set to the side; the sugar will dissolve while completing the rest.
  2. Slice your cucumbers and onions into your preferred thickness. I like mine on the skinnier side, so I use my mandolin. You can peel the cucumbers, but I like the rinds on, they taste crisper when done
  3. Put all of the cucumbers and onions in the container you mixed earlier. Make sure everything is submerged. If there isn’t enough fluid, you can make an additional step 1 to combine the brine.
  4. Leave in the refrigerator at least 2 hours before serving. Under normal refrigeration conditions cucumbers and onions can last anywhere from 2 to 4 weeks. After this period, while they may still be edible, their quality starts to go down.

Knowing how to identify when the cucumbers and onions will go bad will help you determine whether it still safe to eat. Look for the following signs:

  • Off Smell: A sour or rancid odor is a clear indicator that the cucumbers and onions have gone bad.
  • Discoloration: Any unusual darkening of the cucumbers or the brine can signal spoilage.
  • Mold: Visible mold growth on the surface of the brine or the cucumbers themselves means they should be discarded.
  • Texture Changes: If the cucumbers feel excessively soft or mushy, it is best to err on the side of caution and throw them out.
