Spinach Artichoke Dip to bring a tear to your eye

This is a family favorite. Every holiday it is a required just to munch on while cooking throughout the day. (It also keeps the waifu happy.) So I had to share to make sure that the yummy spreads!

Spinach Artichoke Dip 🍥

Ingredients:

  • 6 oz cream cheese
  • 1/2 c mayo (NOT MIRICLE WHIP)
  • 2 tbs water
  • 1 tbs lemon juice
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup Parmesan Cheese (shredded)
  • 3 minced garlic cloves (I do more)
  • 20 oz frozen chopped spinach, thawed
  • 2 jars artichoke hearts, drained

Steps:

  1. In a bowl, add the cream cheese, mayo, water, lemon juice, salt, pepper and garlic. With a hand mixer, mix until smooth and creamy.
  2. Drain the artichoke hearts in a mesh strainer and cut into more manageable size pieces with kitchen shears. Add to the bowl.
  3. Press the thawed chopped spinach in the mesh strainer to remove excess water. Add to the bowl.
  4. Fold the artichoke hearts and spinach into the smooth creamyness in the bowl until evenly mixed.
  5. Pour into the crockpot for 1-2 hours on low.
  6. 15 minutes before serving, stir in the Parmesan cheese and continue on low.
  7. Serve and enjoy!
